Bajra Roti (A Rajasthani treat)


Bajra flour – 1 cup
Chickpeas flour (Besan) – ½ cup
Pinch of salt
Warm water (about 1 cup)


Mix all the dry ingredients together in a wide bowl. Make a well in the centre. Pour warm water slowly. Mix and knead gently and make dough. Dust a rolling board with the bajra flour. Pat with hands to make a ¼ inch thick chapatti. Gently lift and put on warm tava (griddle). Roast on both sides first on the griddle, then on direct flame. Smear with little ghee or butter.

 Serve with curd, pickle or even crushed jaggery.
